Roxie’s Famous Pizza Crust

Roxie’s Famous Pizza Crust

Jump to Recipe

My Mom, while reading the newspaper back in the 70’s stumbled upon a recipe for pizza crust that she decided looked good enough to cut out and keep. I don’t know how long she held on to that clipping before she finally decided to try the recipe but needless to say, our family has been making it ever since.

It isn’t your typical pizza crust, it doesn’t really have a doughy texture but rather a more flacky, pastry type of consistency when it’s cooked. It’s also very light and doesn’t bog your body down like some of the other heavier pizza crusts can do, it allows the ingredients of the pizza to shine and completes the toppings perfectly!

Over the years, I changed a couple of ingredients to enhance the flavor to give it a more savory flavor. I’ve made this recipe for many years and it never disappoints family and friends. It’s the number one recipe that I get requests to make which is why I thought it would be appropriate to be the first recipe I feature on my new blog. I hope you enjoy it as much as we have!

As you can see from this picture of the simple ingredients I use to produce such a delicious pizza crust, there is nothing special or fancy and most items can be purchased at your local Costco.

Just make sure that after you make your dough, you let it rest for about 10 minutes so that all the ingredients can get accustomed to one another.

After you let the dough rest, get a large piece of parchment paper about the size or a bit bigger than your 9 x 14 cookie sheet. Lightly flour the paper and roll out the dough to fit the cookie sheet leaving some hangover to form the crust on the edges.

Next you simply flip the parchment paper over the cookie sheet and form the crust edges with your hands. Pre-cook for 15 minutes at 375 on 2nd to the lowest rack in your oven.

Notes

I always use Pomi Strained Tomatoes for my sauce and season with Italian seasoning and fresh crushed garlic.
For the dough I stick with Bertolli Extra Virgin Olive Oil.
For the toppings I usually make an everything pizza using different colored bell peppers, red onions, cooked sausage and turkey pepperoni which keeps the grease down.
Top with mozzarella and a small portion of extra sharp cheddar cheese.
